González Byass presents the 2025 Limited Edition of Finos Palmas Collection, four oenological treasures from Jerez that embody the different ages of a single wine: Tio Pepe.

González Byass unveils the annual Collection of Tío Pepe Palmas, four wines that reflect different stages in the ageing of a single Fino. Released each November, the collection highlights the winery’s expertise in biological ageing and its longstanding tradition in Jerez.
The “Palmas” are designations which, as defined by Manuel María González-Gordon, founder of the company, in his book Jerez-Xerez-Sherry, are applied to those Fino wines from Jerez that stand out for their remarkable clarity, finesse, and delicacy of aroma. The number of “palmas” is proportional to the degree of ageing. These wines result from a meticulous process of selection and classification based on ageing time and finesse, a practice that has been carried out in the González Byass cellars in Jerez since 1880.
The Tío Pepe Finos Palmas 2025 Collection brings together four wines that embody the result of meticulous work in the González Byass cellars of Jerez. This endeavour has been led by winemaker and master blender Antonio Flores, together with his daughter, Silvia. As is customary, the selection of the Palmas has been shaped by the year’s climatic conditions. The extreme contrasts, with an especially warm summer followed by a decisive winter and spring, have contributed to the singularity and excellence of this collection.
The wines consist of:
Una Palma
Fino of great character, sourced from butts no. 30, 31, 79, and 80 of the Gran Bodega Tío Pepe. After six years of ageing beneath an intense white veil of flor, Una Palma develops the typical notes of biological ageing: dried fruits, bakery nuances, hints of talc, and a pleasantly savoury finish. This wine pairs beautifully with classic combinations such as Ibérico ham, seafood, marinades, ceviches, and seafood rice dishes.
Dos Palmas
A sublime, long-aged Fino that reveals the perfect balance between soil and flor. Butts no. 25 and 75 were selected from the 148 that make up this solera, which matures on the second floor of the Gran Bodega Tío Pepe. Mature and wise, it offers an intense nose with sharp acetaldehyde notes and subtle faded flowers. On the palate, it is powerful, long, structured, savoury, and saline. With eight years of ageing, Dos Palmas is the perfect companion for acidic dishes, dressings, and fresh grilled produce, as well as light cheeses and cured meats.
Tres Palmas
A Fino Amontillado in which biological ageing reaches the very limit between life and death after ten years of maturation. Only one butt — no. 23 — has been selected from the 149 that make up the historic Amontillado Fino solera of La Constancia. Tres Palmas enhances dishes such as almadraba red tuna, traditional stews, cured cheeses and charcuterie, as well as Asian and spiced cuisine. This butt marks the fine line that separates biological from oxidative ageing, offering subtle and elegant woody aromas, with a creamy, savoury, and saline finish.
Cuatro Palmas
A wine associated with the very perfume of Jerez. Time and the bodega have shaped its essence to perfection in this very old Amontillado. Tío Pepe Cuatro Palmas comes from a single butt, no. 4, which ages in the La Constancia Solera Museo. This Amontillado reveals the extraordinary capacity of the albariza soil and the Palomino Fino grape to age gracefully for 53 years, offering an imposing, profound, and powerful wine that needs nothing more than time to be enjoyed.
The wines will be available across on trade channels at the end of 2025 and into 2026.
