Unicorn Swedish Forest Restaurant Featured in “Knife Edge: Chasing Michelin Stars”, Premiering 10 October 2025.

Knystaforsen, the celebrated fire-led restaurant deep in the forests of southern Sweden, is one of the select restaurants featured in Knife Edge: Chasing Michelin Stars, a landmark new documentary series from Apple TV+.

Premiering globally on 10 October 2025, the eight-part series explores the emotional, physical and creative demands of pursuing a Michelin star, the world’s most elusive culinary accolade. Produced by Studio Ramsay Global and hosted by Topjaw’s Jesse Burgess, Knife Edge takes viewers inside some of the most extraordinary kitchens on Earth, with rare behind-the-scenes access across an entire Michelin Guide season.
Episode 4, airing on 24 October, will spotlight Knystaforsen and its founders Nicolai and Eva Tram. Set in a converted sawmill beside a rushing river, Knystaforsen is the only restaurant in Sweden to be featured in Knife Edge and it is known for its uncompromising connection to nature, elemental wood-fired cooking, and hyper-local ingredients sourced from the surrounding forest and farms. Since opening, it has become one of Scandinavia’s most talked-about restaurants, celebrated for its warmth, precision and raw beauty.

Knystaforsen is a destination restaurant located in a remote sawmill by the river in Rydöbruk, Halland County, Sweden. Led by chef Nicolai Tram and Eva Tram, the restaurant celebrates fire as its only source of heat, cooking exclusively over open flames in the heart of the forest. Seasonal ingredients are foraged, hunted, fished, or grown in collaboration with local producers, resulting in a tasting menu that reflects the shifting rhythm of nature.
